Daily takings

Post one day of sales split by cash, card and aggregator, with food and beverage separated and alcohol on its own line.

Settlement reconciliation

Aggregators and card processors settle net of commission days later. The receivable is held on its own account until the payout lands, and a payout whose arithmetic does not close is refused rather than plugged.

Stock and wastage

Run stock on weighted average or FIFO, with duty and inward freight joining the cost of the goods they were paid on instead of being expensed away.

Events and banquets

Events do invoice: run each one from the banquet event order with the deposit held as an advance until the day.

Front and back of house

Wages split FOH and BOH, with municipality and food-safety permits tracked as their own cost.

In the UAE

Municipality food permits, Civil Defence approvals and food-handler cards are tracked with their expiry dates, and takings carry the correct VAT treatment line by line.
